About me

My background is a bit different from most of the builders out there because I was a foodie and a cook before to became a metal fabricator. The latter was the answer to my demands: I wanted to build cooking devices that I could not find or that were to expensive for me or that were not build correctly.

My approach to smokers fabrication is purely dictated by functionality, that’s why you will never see a grill door on the firebox (that is bbq not smoking!) or steel thinner than 1/4″. Once a smoker performs well, it is allowed to play designer and add fancy legs and Cnc cut hinges.

I am a lifelong maker and thinkerer, Italian, as in born and raised in Italy untile the age of 34, and I have an insatiable passion for cooking, gift of my nonna, which was a private cook (private chef would could her today) and whom cooking experience spawned from traditional Italian and French cuisine.
At a certain point in my life I was into perfecting the Argentinian way of cooking meat, fascinated by it and I decided to build an Argentinian grill. And I never stopped. Soon the first offset smoker was build, then an outdoor kitchen with a built in griddle and so on.

I have years of experience in pizza making, I am a trained charcutier, and specialize in Italian cuisine other than smoking meats and bbq. I enjoy giving cooking classes, being a consultant for the food industry.
